ISO
ISO Is the sensitivity of your camera to light, it ranges from 100 to 12,800 and sometimes even higher, not all cameras can reach such high ISOs, most only go up to 3200.
Higher ISO are really good for night photography where minimal natural light is available.
Lower ISO are best for brighter photography where lots of natural light is available
The downside to increasing your ISO is that as the photographer increases the ISO the picture begins to get more grainy and lose quality, especially above 3200 the noise is very visible.

The Composition below was taken at 8 PM with the candle placed under a tree so minimal natural light was available, this made it much better for showing off the difference in ISO .
Summary
From the pictures I have taken, I can summarise that ISO is a fairly important and useful setting when it comes to Night Photography or Photography generally in dark scenarios, however I do understand the downsides to using ISO like the Noise/Grain that shows up as you increase the ISO.
